Round Two!

  
Here are all of our delicious, cuter than cute, push up cupcakes.  Today we made Lemon Raspberry and Chocolate Mousse.  We love them!



This is our Chocolate Mousse with peppermint buttercream frosting and a homemade marshmallow peep.  Jereen made the peeps!  Too cute!  These are stinkin' delicious!



Here are our Lemon Raspberry with Triple Cheese Lemon frosting.  These have layers of lemon curd and raspberry filling.  We used Amy D.'s home grown eggs to make our batter extra yellow.  Thanks Amy!  She will be on our distribution list again. :)  We love these too!  That's our story and we're stickin' to it!  Enjoy!

April Cupcake: Push Pop





Here are our April "cupcakes."  They are really call Push Up Cupcakes.  We LOVE them!  Jereen and I spent a couple of days making them for our friends and family.  The first cupcake is carrot cake with a pecan caramel filling and triple cheese frosting.  The garnish is candied carrot strips.  (Thank you, Kent, for the long shreds of carrots!)  The second cupcake is white cake with cheese cake filling and strawberry frosting.  Both Push Up Cupcakes were delicious and worth the time and effort put into making them.

Relief Society Birthday Cupcake


Here is a pic of the cupcakes Jereen, Erica and I made to commemorate the Relief Society Birthday.  We made 72 of them and gave them to all the sisters in our ward on Sunday.  They were beautiful and yummy!  Jereen was the master and taught Erica and I how to make this easy cupcake.  It's a stunning cupcake and was fun to hand out to everyone!

Jereen came by and gave us a few of her March Lemon Meringue cupcakes.  They were sooooo delicious!  I think it was a winner!

Red Velvet Cupcakes


This month I made red velvet cupcakes filled with chocolate fudge and a cream cheese frosting.  I also made the cute little free-form chocolate hearts on top of them as a garnish.  They were supposed to all stand up like the one in front, but alas, they all fell over!  I love these damask cupcake papers!  They were yummy delicious!  

Confession:  Red Velvet cake from a mix, frosting from a can, and the filling was a spoonful of hot fudge baked into the cupcake.  Nothing fancy, nothing from scratch!  And...they still were yummy delicious!  


Here is a bonus picture of the way I filled the cupcakes.  Erica told me I could spoon some store bought hot fudge on the cake batter and it would sink down in the cupcake during the baking.  It totally worked!  It was much easier than trying to fill the cupcakes after they were baked.  Thanks Erica!

LL's Triple Salted Caramel Cupcakes


Thank you Melanie for this most delicious cupcake recipe!  I will say it was quite labor intensive, but worth the effort!  I doubled the batch and made 30 of them.  I gave most of them away, but saved a few to eat.  I have to admit I burned the first batch of caramel, but that is sort of what this was all about for me--learning new techniques.  I'm already excited for February's cupcake creation! Get Your Cupcake On!

Melanie's Triple Salted Caramel Cupcakes

It seems that ever since we finished the year of cakes, something was missing.  It was kind of fun to make all those fancy cakes every month and challenge yourself.  I enjoyed learning all the techniques too.  I'm apparently not the only one that has missed making the cakes.  Melanie is making a different cupcake each month this year for the Burdick family as a fulfillment of a Christmas present.  I'm jumping on her bandwagon!  Anyone else can join in the cupcake fun.  All you have to do is make a different cupcake each and every month of the year 2011.  There are no restrictions--it is not a contest!  Just have fun and try out some of the new cupcake recipes and papers!  It's going to be a yummy year!  If you would like to post your cupcake on the blog, leave a comment or message me and we will add you to the blog team and allow edits.
